Keto Chocolate Mug Cake Recipe
Keto Chocolate Mug Cake—rich, chocolatey, moist, decadent…how does that sound? Is your mouth watering yet? You have a busy life but you still want to eat better without putting much effort into it. If you can relate to this, I bet you are always on a look out for quick and easy recipes. And as a bonus, quick and easy recipe that will satisfy your sweet tooth. Raise your hand if you love desserts!
Here is my easy go to dessert for all of you chocoholics out there! It’s low carb, high in healthy fats, and scrumptious!
KETO CHOCOLATE MUG CAKE RECIPE
I will cut through the chase because I hate going to recipe blogs to scroll all the way down to find what I really need–the recipe! I can always talk about it later on, right? I’ll reserve the fluff at the end and will save you the time trying to scroll through 🙂
I’ve got two versions for you.
If you like light and fluffy…
INGREDIENTS (version 1):
1 tbsp butter
1 and ½ tbs cream cheese
1 tbsp almond flour
1 tbsp cocoa powder
1 tsp baking powder
⅛ tsp espresso (optional)
Few drops of liquid stevia (or sweetener of your choice)
If you like more densed…
INGREDIENTS (version 2):
6 tbsp almond flour
1 and ⅔ tbsp cocoa powder
1 tbsp granulated erythritol (or sweetener of your choice)
1/8 tsp salt
1/4 tsp baking powder
3 tbsp heavy cream
1/4 tsp pure vanilla extract
Both recipes call for the same method of preparation.
- Mix all ingredients in a microwave-safe mug. Use wide mouthed mugs to avoid overflow.
- Microwave for about 1 minute. If still liquid-y, add 30 second interval as needed until just gooey enough. Let it sit in room temperature to cook up a little bit more. You don’t want to overcook it as it will loose its moist and gooey-ness.
- Top with whipped cream, walnuts, or sugar free chocolate chips.
Be careful on over microwaving your cake. Microwave power varies and I suggest to try cooking for 30 seconds on your first time and check. If it’s not cooked yet, keep adding 30 seconds and check until it is cooked to your liking.
When you’re on keto, you have to get creative. There are ways to still eat your classic favorite desserts.
Modify the ingredients!
There are a lot of alternatives to flour, sugar and milk. For the second recipe, for example, you can substitute heavy cream with almond milk if you are not doing keto for a lesser fat version of mug cake.
Note: I am not doing keto right now as I am writing this post. I love experimenting on my body and see how it responds to different types of eating. And I’m a big proponent of doing what works for you best–may it be vegan, keto, carnivore, vegetarian, etc.
Right now, I am doing plain clean eating, with my macros distributed throughout protein, carbs, and healthy fats. I will do keto occasionally, especially on those days where I need to shred and get rid of those last few pounds.
